Breakfast Toaster Oven Recipes

1. Toasted Brie, Apple and Ham Sandwich

To give this sandwich a substantial main-course feel, look for a thinly sliced ham steak rather than deli ham for a meaty flavor and texture. Creamy brie and crunchy tart-sweet apples complement the robust ham.

Ingredients:

  • 1 large baguette (about 1 lb.), cut into 4 pieces
  • 7 oz. brie, most of the rind trimmed off and thinly sliced  (trim and slice the brie while it’s cold)
  • 2 Tbs. unsalted butter
  • 1-1/2 medium Granny Smith apples, cored, and cut into 1/4-inch-thick wedges (about 1-1/2 cups)
  • 3/4 lb. ham steak, thinly sliced on the diagonal
  • 2 Tbs. whole-grain Dijon mustard
  • 1 Tbs. honey
  • 1 tsp. chopped fresh thyme

Preparation

  • Position a rack in the center of the oven and heat the oven to 425°F. Split the baguette pieces lengthwise, open them up like a book, and top one side with the brie. Set on a baking sheet lined with parchment paper or aluminum foil, and bake until the cheese melts and the bread lightly browns, about 5 minutes.
  • Meanwhile, melt the butter in a large (12-inch) heavy-duty skillet over medium-high heat. Add the apples and cook, tossing every minute or so, until they start to soften and brown in places, 3 to 4 minutes. Add the ham and cook, gently tossing, until it warms. Remove from the heat and gently toss with the mustard, honey, and thyme until the ham and apples are evenly coated. Using tongs, distribute the ham mixture into the warm pieces of baguette, secure with 2 toothpicks, cut in half, and serve.

  • 2 tbsp flour (I used ww pastry)
  • 1.5 tbsp peanut butter
  • 1/16 tsp baking soda
  • very scant 1/16 tsp salt
  • 1/4 tsp pure vanilla extract
  • 1.5 tbsp agave or maple syrup (Or use 3/4 tbsp each sugar and brown sugar, or 1.5 tbsp xylitol)
  • 1 tsp applesauce (or more, if using dry sweetener)

Preparation

  • Mix dry ingredients. 
  • Add peanut butter and wet ingredients.
  • Mix well and form into one or two cookies. Flatten into cookie shapes and bake in a preheated toaster oven at 350F for 8-10 minutes.

3. Bruschetta

To make this presentable bruschetta, all you need is a fresh, crusty French baguette (which can be easily picked up at the Walmart Bakery), fresh tomatoes, fresh basil, a fresh garlic clove, and fresh mozzarella cheese. This is one of the quickest toaster oven recipes if you are in for a quick meal.

  • 1/2 French baguette, sliced into 12 pcs.
  • 1 clove garlic
  • 12 cherry tomatoes, diced
  • 1/4 cup fresh mozzarella cheese, diced
  • 4 lg. basil leaves, chiffonade
  • extra virgin olive oil
  • salt & pepper, to taste

Preparation

  • Preheat your oven to 450 degrees.
  • Slice half of the baguette on the diagonal into 12 1/2-inch thick pieces. Place the slices on a baking sheet and toast them on the top rack of your oven at 450 degrees for about 5-6 minutes, until turning golden brown around the edges.
  • When the slices are cool enough to handle, rub them with a clove of garlic that’s been cut in half. Then drizzle with extra virgin olive oil.
  • Place the diced tomatoes, diced mozzarella and basil together in a small bowl. Drizzle with extra virgin olive oil and season with salt and pepper to taste. Stir to combine.
  • Spoon the tomato mixture over the bruschetta or serve on the side as a dip.

4. Avocado Breakfast Toast

  • 6 slices whole wheat or artisan bread

Preparation

  • Combine all ingredients, except toast, in a food processor, and pulse until smooth. Or, use a fork and mash avocado, along with the other ingredients, until smooth.
  • Toast bread and spread each with approximately one tablespoon avocado spread. Sprinkle with additional red pepper flakes, if desired.

  • 1 or more (16-ounce) containers extra-firm tofu
  • 1 tablespoon cornstarch, optional for crispy tofu

Marinade (optional):

  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon water

Preparation

  • Remove the tofu from its packaging and pat dry with paper towels or a dish cloth. 
  • Remove the weight and drain off the excess liquid. Slice the pressed tofu into cubes, thin slices, or sticks, depending on how you plan to use the tofu.
  • To give the tofu extra flavor, marinate the tofu pieces for at least 30 minutes or as long as overnight. Whisk together the marinade ingredients. Transfer the marinade and the tofu to a shallow container. Gently toss the cubes until coated with the marinate. Place in the fridge for at least 30 minutes. If marinating longer, toss the tofu occasionally to marinate evenly.
  • When ready to bake the tofu, heat the oven to 350°F.
  • Arrange the tofu on the baking sheet in a single layer.
  • Bake until the outside of the tofu is golden and the pieces look slightly puffed, 20 to 45 minutes depending on the size and shape of your tofu. Toss the tofu every 10 minutes so the pieces bake evenly.

  • Heat toaster oven to 425° F.
  • In a large bowl, whisk together the orange juice, tomato paste, garlic, cumin, cinnamon, 2 tablespoons of the oil, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
  • Add the pork and toss. Cover and refrigerate for at least 30 minutes and up to 8 hours.
  • At the same time, in a bowl, combine the eggplant, onion, and the remaining oil, salt, and pepper.
  • Place the vegetables on skewers, alternating eggplant and onion.
  • Transfer the skewers to a foil-lined toaster-oven baking tray.
  • Bake for 20 minutes. Turn the vegetables.
  • Place the pork on skewers and add them to the tray.

  • 6-8 portobello mushrooms, stem removed, washed and dried with a paper towel
  • 1 cup breadcrumbs or panko
  • 1/2 cup butter
  • 4 cloves garlic, finely minced
  • 3/4 teaspoon dried oregano
  • 1 scallion, finely chopped
  • 1/2 cup fresh parsley, finely chopped (or more, to taste)
  • Coarse salt and fresh cracked pepper
  • A handful grappe or cherry tomatoes, halved

Preparation

  • Preheat your oven to grill/broil settings on high heat. Arrange a rack to the middle of your oven.
  • In a saucepan or a microwave safe bowl, combine butter, garlic and oregano and melt until garlic is fragrant. Brush the bottoms of each mushroom with a bit of melted butter and place them, buttered side down, on a rimmed baking sheet.
  • In a medium bowl, combine breadcrumbs, parsley, scallion, salt and pepper and pour the garlic herb butter mixture over. Mix well to combine.
  • Flip mushrooms and brush over the insides of each mushroom cap with melted butter. Stuff each mushroom with herbed garlic butter stuffing and top with tomato halves. Grill or broil in the oven until golden, about 5 minutes.
  • Remove from oven, garnish with fresh parsley and serve immediately.

15. Crispy Parmesan Chicken with Mozzarella Cheese

If you don't have an oven, your toaster oven can always produce tasty crispy parmesan chicken without too much of a compromise at all. Add some pasta and you're in for a full meal!

  • 2 slices chicken breast with no skin
  • 1/2 cup breadcrumbs
  • 3 tbsp parmesan cheese
  • 1 egg beaten
  • 1 pinch paprika
  • Cooking oil
  • Cooked pasta
  • 50 grams of tomato paste
  • 3 cloves garlic
  • 2 small tomatoes chopped
  • To taste salt and pepper
  • 5 tbsp mozzarella shredded

Preparation

  • Mix the breadcrumbs, Parmesan, papprika, salt and pepper. In a separate bowl, beat up egg.
  • Season the chicken with salt and pepper.
  • Dip the chicken into the egg and coat with the breadcrumb mixture. Set aside to dry
  • Fry the chicken in medium heat. Set aside when cooked on kitchen paper to drain the excess oil.
  • In a sauce pan, saute garlic and tomatoes. Pour in the tomato paste and the pasta. Add 2 tbsp of parmessan and season to taste.
  • Pour in the pasta in the toaster oven pan and top in the breaded chicken. Put slices/shredded mozzarella on top and bake in oven until mozzarella is melted.
